  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil

  • 1¾ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch allspice
  • 1/4 teaspoon coarse kosher salt
  • 1 tablespoon butter, at cool room temperature
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and prepare a greased 9” square baking dish lined with parchment paper.
  2. Boil apple cider in a sauté pan until reduced by half; mix in diced butter until melted.
  3. In a bowl, whisk eggs, sugars, oil, sour cream, spices, baking powder, baking soda, and salt.
  4. Combine the warm cider mixture with wet ingredients.
  5. Fold in flour until just combined; pour batter into the prepared dish.
  6. Bake for 22–25 minutes until golden and cooked through.
  7. Cool slightly before brushing with melted butter and sprinkling cinnamon sugar on top.
