- ¼ cup sour cream (or Greek yogurt) (room temperature)
- 2 large eggs (room temperature)
- 1 teaspoon pure vanilla extract
- ½ cup milk (room temperature)
- 1 ½ cups diced apples (Granny Smith or Honeycrisp)
- ¼ cup packed light brown sugar
- 2 Tablespoons granulated sugar
- 4 Tablespoons unsalted butter (melted)
- 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 400°F. Prepare your muffin tin by placing paper liners in each cup.
- In a medium bowl, whisk together ¾ cup all-purpose flour, ¼ cup brown sugar, 2 tablespoons granulated sugar, and 1 teaspoon ground cinnamon. Pour in the melted butter and mix until small clumps form. Set aside.
- In another medium bowl, whisk together 2 cups all-purpose flour, 1½ teaspoons baking powder, ½ teaspoon salt, and 1 tablespoon ground cinnamon. Set this mixture aside.
- In a large bowl, use an electric mixer to beat together ½ cup packed light brown sugar, ¼ cup granulated sugar, and ½ cup unsalted butter until light and fluffy. Add the eggs, sour cream, and vanilla extract; mix until well combined, scraping down the sides as needed.
- Add half of the flour mixture to the wet ingredients and mix just until combined. Pour in the milk and mix again before adding the remaining flour mixture. Stir in diced apples by hand.
- Divide the batter among prepared muffin cups, filling each about three-quarters full. Generously sprinkle crumble mixture on top of each muffin.
- Bake at 400°F for about 20 minutes or until a toothpick inserted comes out clean or with few crumbs. Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
