  • 1 pound boneless skinless chicken thighs
  • 1 pound smoked spicy sausage (andouille or conecuh)
  • 300g frozen chopped onion, bell pepper, and celery mix
  • 1 can (400g) diced tomatoes with basil, garlic & oregano
  • 60ml olive oil
  • 1 can (400ml) chicken broth
  • 2 cups uncooked extra long grain rice
  • Assorted herbs & spices (parsley, basil, garlic powder, Cajun seasoning)

Instructions

  1. Heat olive oil in a heavy Dutch oven over medium-high heat. Season chicken thighs with Cajun seasoning and brown for 3-5 minutes. Remove and set aside.
  2. In the same pot, brown the sliced sausage for about 5 minutes. Add frozen vegetable mix and sauté until tender.
  3. Return the chicken to the pot along with diced tomatoes, chicken broth, parsley, basil, garlic powder, Cajun seasoning, black pepper, and salt. Mix well.
  4. Stir in uncooked rice and bring to a boil. Reduce heat to low, cover tightly, and simmer for 40 minutes without lifting the lid. After 10 minutes of simmering, gently stir once.
