  • 2 pounds ground beef
  • 1 medium green bell pepper, diced
  • 2 small yellow onions, diced
  • 14 ounces canned diced tomatoes
  • 14 ounces canned whole kernel corn
  • 2 cups Bisquick
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 8 ounces shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch casserole dish with cooking spray.
  2. In a large skillet over medium-high heat, brown the ground beef until cooked through. Drain excess grease. Add onions, bell peppers, taco seasoning, and 1/2 cup water; simmer for 10 minutes.
  3. In a medium bowl, combine Bisquick and 3/4 cup water; spoon into the bottom of the casserole dish and bake for 5 minutes.
  4. Layer the beef mixture on top of the biscuit base followed by drained tomatoes and corn.
  5. In another bowl, mix sour cream, mayonnaise, half of the cheddar cheese, black pepper, and green chilies; spread on top of the beef layer and sprinkle with remaining cheese.
  6. Bake for an additional 30 minutes. Let sit for 7-10 minutes before serving.
