  • 1 medium onion
  • 2 cups sharp cheddar cheese
  • 1 cup sour cream
  • 1 cup whole milk
  • 1/4 cup unsalted butter
  • 3 cloves garlic
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, season sliced potatoes with salt and pepper.
  3. Sauté chopped onion in melted butter until translucent; add minced garlic and cook for another minute.
  4. Whisk together sour cream, milk, remaining melted butter, herbs, salt, and pepper for the sauce.
  5. Grease a baking dish and layer half of the potatoes, sautéed onions and garlic, and half of the cheese. Repeat layers ending with cheese on top.

  7. Mix panko breadcrumbs with olive oil and sprinkle on top.
