  • 1/2 cup plus 1/3 cup shredded mozzarella cheese, divided
  • 1/4 cup plus 2 tablespoons shredded parmesan cheese, divided
  • 14 oz canned artichoke hearts, drained and chopped
  • 2 cups fresh spinach, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F and prepare an 8×8 baking dish with cooking spray.
  2. Slice chicken breasts and cook in olive oil until opaque (6-8 minutes). Season with salt and pepper.
  3. In a mixing bowl, combine Neufchâtel cheese, Greek yogurt, cottage cheese, mozzarella, parmesan, garlic powder, basil, and onion powder until smooth.
  4. Chop spinach and artichokes; fold into the cheese mixture.
