Instructions

  1. Cook the rice by combining it in a pot with 3 cups of water and a pinch of salt. Bring to a boil, then cover and simmer for about 15 minutes until fluffy.
  2. Slice the chicken breasts into thin strips using a sharp knife.
  3. In a bowl, mix chicken strips with chili powder, paprika, cumin, garlic powder, and salt until well-coated.
  4. Heat olive oil in a skillet over medium-high heat. Cook the seasoned chicken for 3-5 minutes until golden brown; transfer to a plate.
  5. In the same skillet, sauté the sliced bell peppers and red onion for about 3-4 minutes until tender.
  6. Assemble meal prep bowls by dividing cooked rice among four airtight containers. Layer each with chicken and sautéed veggies. Top with avocado slices, chopped cilantro, and lime wedges when ready to serve.
