  • 200ml heavy cream
  • 80g mascarpone
  • 120ml coconut milk
  • 140g softened butter
  • 160g all-purpose flour
  • 25g unsweetened cocoa powder
  • Grated coconut for decoration
  • Gooey cocoa spread for filling

Instructions

  1. Whip heavy cream and mascarpone together; gradually add powdered sugar until well combined.
  2. Soak vegan gelatin sheets in cold water; heat coconut milk and dissolve the gelatin in warm milk before folding into whipped cream.
  3. Pour mousse into hemisphere molds, adding cocoa spread halfway; freeze for at least 6 hours.
  4. Mix shortbread ingredients into a dough, roll out, cut shapes, and bake at 180°C for 10 minutes.
  5. Assemble by placing the domes on cooled shortbreads and decorate with grated coconut before serving.
