- 3/4 cup cake flour, spooned and leveled
- 1 tsp. cornstarch
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 8 Tbsp. cold butter, unsalted, cut into cubes
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 tsp. vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 Tbsp. unsalted butter, melted
- 3 Tbsp. heavy cream or milk
- 1 cup powdered sugar, sifted
- 1 tsp. vanilla
- pinch salt
Instructions
- Prepare the streusel filling by mixing flour, brown sugar, cinnamon, salt, and softened butter until crumbly; refrigerate.
- Preheat oven to 400°F (200°C) and line baking sheets with parchment.
- In a bowl, combine dry ingredients: all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
- Cream cold butter and sugars until smooth; add egg and vanilla.
- Gradually mix in dry ingredients until combined.
- Shape dough into balls and create indents for the streusel filling.
