  • 3/4 cup cake flour, spooned and leveled
  • 1 tsp. cornstarch
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 8 Tbsp. cold butter, unsalted, cut into cubes
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 2 Tbsp. unsalted butter, melted
  • 3 Tbsp. heavy cream or milk
  • 1 cup powdered sugar, sifted
  • 1 tsp. vanilla
  • pinch salt

Instructions

  1. Prepare the streusel filling by mixing flour, brown sugar, cinnamon, salt, and softened butter until crumbly; refrigerate.
  2. Preheat oven to 400°F (200°C) and line baking sheets with parchment.
  3. In a bowl, combine dry ingredients: all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Cream cold butter and sugars until smooth; add egg and vanilla.
  5. Gradually mix in dry ingredients until combined.
  6. Shape dough into balls and create indents for the streusel filling.
  7. Fill each indent with streusel; bake for 8-11 minutes until golden.
  8. Cool on a rack before drizzling with icing.
