- 1 pound ground beef or lamb
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup frozen peas
- 2 cups potatoes, diced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the meat in olive oil over medium heat in a large pot. Drain excess fat.
- Sauté chopped onion, carrots, and celery for 5–7 minutes until softened; add garlic and cook for an additional minute.
- Pour in beef broth and add potatoes along with Worcestershire sauce and seasonings; bring to a boil.
- Reduce heat and simmer for 20–25 minutes or until potatoes are tender.
- Stir in frozen peas and cook for another 5 minutes; adjust seasoning if needed.
- Serve in bowls garnished with fresh parsley.
