Ingredients

  • 1 lb chicken sausage (mild or spicy)
  • 4 cups chicken or vegetable broth
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup carrots, diced
  • 1 cup heavy cream
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the chicken sausage until browned. Drain excess fat and set aside.
  2. Sauté garlic and diced carrots in the same pot for about 3 minutes until tender.
  3. Add broth and bring to a simmer.
  4. Stir in gnocchi and cook for 2–3 minutes until they float.
  5. Mix in spinach and heavy cream; allow the spinach to wilt.
  6. Return sausage to the pot and add thyme, salt, and pepper. Simmer for another 5 minutes.
