- 1 package gnocchi
- 1 lb chicken sausage (mild or spicy)
- 4 cups chicken or vegetable broth
- 2 cloves garlic, minced
- 2 cups fresh spinach
- 1 cup carrots, diced
- 1 cup heavy cream
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot over medium heat, cook the chicken sausage until browned. Drain excess fat and set aside.
- Sauté garlic and diced carrots in the same pot for about 3 minutes until tender.
- Add broth and bring to a simmer.
- Stir in gnocchi and cook for 2–3 minutes until they float.
- Mix in spinach and heavy cream; allow the spinach to wilt.
- Return sausage to the pot and add thyme, salt, and pepper. Simmer for another 5 minutes.
- Serve hot, optionally garnished with fresh herbs.
