  • 15 ounces black beans (drained & rinsed)
  • 15 ounces red beans (drained & rinsed)
  • ¾ cup dried red lentils
  • ½ cup light cream cheese (or dairy-free alternative)
  • 1 teaspoon olive oil (or avocado oil)
  • 1 cup corn (fresh, canned, or frozen)
  • 3/4 cup salsa (use mild or spicy, or salsa verde)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder (or 2 fresh garlic cloves)
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional, use more for a spicier soup)
  • Salt and pepper (to taste)
  • Crushed tortilla chips to garnish

Instructions

  1. Dice the onion and jalapeno pepper.
  2. Rinse the lentils and drain the beans.
  3. In your slow cooker, combine all ingredients except for cream cheese.
  4. Pour in the vegetable broth and stir well.
  5. Cover and cook on low for 6 hours or high for 4 hours until lentils are tender.
  6. In the last 30 minutes of cooking, add cream cheese.
  7. Stir before serving and garnish with crushed tortilla chips.
