Ingredients
- 2 pounds shrimp (peeled and deveined)
- 1 English cucumber (small diced)
- 3 green onions (thinly sliced)

Instructions
- In a mixing bowl, combine mayonnaise, sour cream, lime zest and juice, dill, Dijon mustard, minced garlic, kosher salt, and pepper. Set aside.
- Boil water in a pot over medium-high heat. Add shrimp and cook for 2 to 3 minutes until pink.
- Prepare an ice water bath. Transfer cooked shrimp to the ice bath for about 3 minutes before draining.
- In a large bowl, mix shrimp with diced cucumber, green onions, and dressing until well coated.
