- 9 large egg whites
- 1 lb unsalted butter
- 1 tbsp vanilla extract
- 1/4 tsp salt
- red gel food coloring (optional)
- blue gel food coloring (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In one bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream together butter and sugar until fluffy.
- Add eggs one at a time along with vanilla extract. Gradually mix in the dry ingredients alternating with Greek yogurt until just combined.
- Fill cupcake liners two-thirds full and gently press one packet of Pop Rocks into each.
- Bake for about 22 minutes or until a toothpick inserted comes out clean. Cool completely before frosting.
