  • 200g self-raising flour
  • 170g Greek yogurt
  • 100g feta cheese, crushed
  • 2 tablespoons cream cheese
  • Handful of mint leaves, finely chopped
  • 100g spinach, wilted and roughly chopped
  • 2 garlic cloves, minced
  • 1 teaspoon black pepper
  • 1 tablespoon mint sauce
  • 1 tablespoon olive oil

Instructions

  1. In a mixing bowl, combine self-raising flour and Greek yogurt until smooth. Knead for about 5 minutes until soft; cover and set aside.
  2. In another bowl, mix together feta cheese, cream cheese, mint leaves, spinach, garlic, and black pepper until well combined.
  3. Divide dough into four pieces and flatten each into a disk. Place one tablespoon of filling in the center of each disk; fold corners to seal.
  4. Heat a non-stick pan over medium-high heat. Cook each flatbread for 3–5 minutes on each side until golden brown.
  5. For dipping sauce, mix mint sauce with olive oil in a small bowl.
