Ingredients
- 200g self-raising flour
- 170g Greek yogurt
- 100g feta cheese, crushed
- 2 tablespoons cream cheese
- Handful of mint leaves, finely chopped
- 100g spinach, wilted and roughly chopped
- 2 garlic cloves, minced
- 1 teaspoon black pepper
- 1 tablespoon mint sauce
- 1 tablespoon olive oil
Instructions
- In a mixing bowl, combine self-raising flour and Greek yogurt until smooth. Knead for about 5 minutes until soft; cover and set aside.
- In another bowl, mix together feta cheese, cream cheese, mint leaves, spinach, garlic, and black pepper until well combined.
- Divide dough into four pieces and flatten each into a disk. Place one tablespoon of filling in the center of each disk; fold corners to seal.
- Heat a non-stick pan over medium-high heat. Cook each flatbread for 3–5 minutes on each side until golden brown.
- For dipping sauce, mix mint sauce with olive oil in a small bowl.
