  • 3 lbs beef chuck, cut into 2-inch pieces
  • 6 slices bacon, chopped
  • 1 large onion, finely chopped
  • 3 carrots, sliced
  • 2 garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 lb mushrooms, quartered
  • 1/4 cup all-purpose flour
  • 3 tablespoons olive oil
  • Bouquet garni (thyme, bay leaves, parsley)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Cook the bacon until crisp; set aside.
  2. Season beef with salt and pepper. Brown the beef in batches in the same pot; remove and set aside.
  3. Sauté onion, carrots, and garlic in the pot until onions are translucent.
  4. Sprinkle flour over vegetables and stir well.
  5. Return beef and bacon to the pot. Add tomato paste and bouquet garni. Bring to a boil then reduce heat and cover; simmer for about 2 hours.
  6. In the last 30 minutes, sauté mushrooms separately until golden brown and add them to the stew.
