- 1/4 cup all-purpose flour
- 3 tablespoons olive oil
- Bouquet garni (thyme, bay leaves, parsley)

Instructions
- Heat olive oil in a large pot over medium heat. Cook the bacon until crisp; set aside.
- Season beef with salt and pepper. Brown the beef in batches in the same pot; remove and set aside.
- Sauté onion, carrots, and garlic in the pot until onions are translucent.
- Sprinkle flour over vegetables and stir well.
- Return beef and bacon to the pot. Add tomato paste and bouquet garni. Bring to a boil then reduce heat and cover; simmer for about 2 hours.
- In the last 30 minutes, sauté mushrooms separately until golden brown and add them to the stew.
