  • ½ cup unsalted butter
  • 2⅔ cup flour
  • 2 tsp ground ginger
  • 1½ tsp baking soda
  • 1½ tsp ground cinnamon
  • ½ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ½ cup brown sugar
  • ½ cup sour cream (or plain yogurt)
  • ½ cup whole milk
  • 1 large egg

Instructions

  1. Preheat your oven to 425°F and prepare a muffin tray with cooking spray.
  2. In a large bowl, microwave molasses and butter until melted; stir to combine.
  3. In another bowl, whisk flour, spices, baking soda, and salt together.
  4. Mix brown sugar, sour cream (or yogurt), milk, and egg into the cooled molasses mixture.
  5. Gradually add dry ingredients to wet mixture; stir until just combined.
  6. Fill muffin tray to the top and sprinkle with coarse sugar if desired.
  7. Bake for 5 minutes at 425°F; reduce heat to 350°F and bake an additional 11–14 minutes until a toothpick comes out clean.
  8. Cool on a wire rack before glazing with lemon glaze made from powdered sugar and lemon juice.
