  • 1/4 cup red apple vinegar
  • 1/4 cup fresh lemon juice
  • Zest of 4 lemons
  • 12 oz feta cheese, cubed or crumbled
  • 1 English cucumber, chopped
  • 11 oz grape tomatoes, halved
  • 1/2 cup red onion, minced
  • 1 cup green onions, sliced
  • 1 cup Kalamata olives
  • Fresh dill and parsley for garnish

Instructions

  1. Prepare the dressing by combining olive oil, vinegar, lemon juice, zest, Dijon mustard, garlic, salt, pepper, sugar, and oregano in a jar. Shake well to mix.
  2. Cook the pasta according to package instructions until al dente. Drain and toss in the dressing while warm until coated. Let cool to room temperature.
  3. In a large bowl, combine pasta with cucumber, tomatoes, red onion, green onions, olives, and dill. Gently fold in feta cheese.
  4. Cover and refrigerate for at least four hours to let flavors meld before serving chilled or at room temperature.
