Ingredients

- 1 large egg

Instructions
- In a bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
- In another bowl, mix melted coconut oil or butter, egg, almond extract, maple syrup, and almond milk.
- Combine both mixtures and gently fold in diced peaches.
- Chill dough in the refrigerator for 30 minutes.
- Preheat the oven to 325°F (163°C) and line a baking sheet with parchment paper.
- Drop scoops of dough onto the sheet and flatten slightly.
- Bake for 9 to 12 minutes until golden around edges.
- Let cool before enjoying.
