  • 2 large eggs, divided

  • 1 heaping cup powdered sugar
  • 2 teaspoons chai spice blend
  • 1 teaspoon vanilla extract
  • 3 tablespoons heavy cream for glaze
  • 1 tablespoon maple syrup
  • pinch of kosher salt for glaze

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a food processor, pulse together flour, sugar, baking powder, chai spice blend, and salt.
  3. Add cold diced butter and pulse until the mixture resembles coarse crumbs.
  4. Mix chilled heavy cream with one egg and one egg yolk; gradually add to dry ingredients until a dough forms.
  5. Shape dough into a disc, wrap it in plastic, and freeze for 30 minutes.
  6. Roll out dough to desired thickness and cut into wedges.
  7. Brush scone tops with reserved egg white and bake for 20-22 minutes until golden brown.
  8. For the glaze, whisk together powdered sugar, chai spice blend, vanilla extract, heavy cream, maple syrup, and salt until smooth.
