  • 3 tablespoons cornstarch
  • 2 teaspoons grated lemon zest

  • 4 tablespoons unsalted butter
  • 1 tablespoon Greek yogurt
  • 1/3 cup honey
  • 3 large eggs
  • 5 tablespoons fresh lemon juice

Instructions

  1. Preheat oven to 350°F.
  2. Prepare an 8-inch square baking dish with parchment paper.
  3. In a food processor, combine flours, brown sugar, cornstarch, lemon zest, baking powder, and salt.
  4. Add chilled butter and Greek yogurt; pulse until mixed.

  6. Cool crust while you prepare the filling: whisk together eggs, honey, lemon zest, flour, salt, and lemon juice in a bowl.
