  • 6 ounces sliced black olives
  • 1/2 red onion, diced
  • 1 1/2 cups cherry tomatoes, halved
  • 2 tablespoons fresh chopped parsley
  • Sliced pepperoncinis (optional)
  • 2 teaspoons dried parsley flakes
  • 2 teaspoons dried minced onion
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic salt
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a jar, combine olive oil, red apple vinegar, dried herbs, garlic salt, sugar, and black pepper. Shake well and refrigerate.
  2. Cook rotini pasta according to package instructions. Drain and rinse under cold water to cool.
  3. In a mixing bowl, combine cooled pasta with half of the dressing; toss to coat.
  4. Add mozzarella cheese, cured meats, olives, diced onion, cherry tomatoes, parsley, and parmesan cheese. Mix thoroughly.
  5. Pour remaining dressing over the salad and mix again.
  6. Chill in the refrigerator for at least one hour before serving.
