Instructions
- Preheat your oven to 180°C (350°F).
- For the crust, mix gluten-free flour, ground almonds, sugar, salt, and vegan butter until crumbly. Add flaxseed eggs and press into a springform pan. Bake for 10 minutes.
- Prepare the apple filling by simmering diced apples with water, lemon juice, and sugar until soft. Thicken with cornstarch mixed with water.
- Blend tofu, soaked cashews, coconut milk, maple syrup, lime juice, cornstarch, and vanilla until smooth for the cheesecake filling.
- Layer the apple filling over the baked crust and pour the cheesecake mixture on top. Bake for about 45 minutes or until set.
- Cool completely before chilling in the refrigerator for at least 4 hours.
