Ingredients

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. For the crust, mix gluten-free flour, ground almonds, sugar, salt, and vegan butter until crumbly. Add flaxseed eggs and press into a springform pan. Bake for 10 minutes.
  3. Prepare the apple filling by simmering diced apples with water, lemon juice, and sugar until soft. Thicken with cornstarch mixed with water.
  4. Blend tofu, soaked cashews, coconut milk, maple syrup, lime juice, cornstarch, and vanilla until smooth for the cheesecake filling.
  5. Layer the apple filling over the baked crust and pour the cheesecake mixture on top. Bake for about 45 minutes or until set.
  6. Cool completely before chilling in the refrigerator for at least 4 hours.
