- 45 g butter
- 60 g caster sugar

- 1½ teaspoons vanilla bean paste or extract
- 60 g demerara sugar
- ½ teaspoon ground cinnamon
Instructions
- Peel, core, and slice both types of apples into thin wedges.
- In a saucepan over medium heat, melt 45 g of butter. Add apples and 60 g of caster sugar along with grated lemon rind. Cook for about 5-7 minutes until slightly soft.
- In another bowl, whisk together 45 g of flour and 45 g of caster sugar. Heat the milk in a saucepan until warm, then gradually add it to the flour mixture while whisking until smooth.
- Stir in three egg yolks and vanilla until fully combined.
- Spread cooked apples in a baking dish and pour custard mixture over them evenly.
- Combine demerara sugar and cinnamon; sprinkle over the top.
- Preheat oven to 180°C (350°F) and bake for about 20 minutes until golden brown on top.
