  • 3/4 cup sago (small tapioca pearls)
  • 23 ripe mangos (approximately 2 lbs, peeled and diced)
  • 1/2 cup chilled evaporated milk
  • 3 tablespoons condensed milk (adjustable to taste)
  • 1 cup full-fat coconut milk
  • Optional: 1 cup coconut jelly and/or mango jelly

Instructions

  1. In a medium saucepan, bring water to a boil and cook sago pearls until transparent, about 15 minutes. Remove from heat and let sit covered for another 15 minutes.
  2. Strain the cooked sago and rinse with cold water to prevent sticking.
  3. Blend one cubed mango with evaporated milk until smooth.
  4. In a large bowl, combine cooked sago, chopped mango pieces, optional jellies, condensed milk, and coconut milk. Stir in the blended mango mixture.
  5. Chill in the refrigerator for at least one hour before serving.
