  • 5 lb beef shoulder/butt roast
  • 6 dried guajillo chiles
  • 6 dried ancho chiles
  • 2 (25 oz) cans white hominy, drained
  • 10 cloves garlic, divided
  • 1 yellow onion, quartered
  • 4 bay leaves
  • 2 tsp salt
  • 3 tbsp chicken bouillon
  • 2 tbsp oil
  • 1 tbsp dried oregano
  • 1/2 tsp ground cumin
  • 8 oz can tomato sauce
  • 1 tsp white vinegar
  • Shredded cabbage
  • Diced onion
  • Fresh cilantro
  • Lime wedges
  • Avocado (optional)
  • Sliced radishes (optional)
  • Warm tortillas for serving

Instructions

  1. Cut beef into 1-inch cubes and cover with water in a large pot. Boil and skim foam.
  2. Add onion, garlic (5 cloves), bay leaves, salt, and chicken bouillon; simmer for 1.5 hours until tender.
  3. Boil dried chiles for about 15 minutes until softened; then blend with cooking liquid from the beef pot and remaining garlic.
  4. Cook blended chile sauce in oil for about 10 minutes until fragrant.
  5. Remove aromatics from the beef pot; stir in chile sauce, tomato sauce, oregano, cumin, and drained hominy. Simmer for an additional 30 minutes.
  6. Adjust seasoning to taste before serving hot with desired toppings.
