  • 3 cups frozen corn

  • 8 slices Turkey Turkey Bacon, cooked and finely diced
  • 1/3 cup Cotija cheese
  • 1 large avocado, diced
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup mayonnaise
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon paprika
  • 1/8 teaspoon ground cumin
  • 1 teaspoon sriracha sauce
  • 2 large limes (for juice and zest)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. 1. Cook 2 cups of mini farfalle pasta according to package directions in salted boiling water. Drain and cool.
  2. 2. Prepare 3 cups of frozen corn until tender; allow it to cool.
  3. 3. Chop green onions, cilantro, jalapeño, and cook Turkey Bacon before dicing.
  4. 4. In a bowl, whisk together mayonnaise, chili powder, paprika, cumin, sriracha, lime zest (from 1 lime), and juice from 2 limes; season with salt and pepper.
