Instructions
- Preheat your oven to 350°F (175°C) and line a 9×5 loaf pan with parchment paper.
- In a large mixing bowl, combine shredded zucchini, eggs, vegetable oil, Greek yogurt, and vanilla extract. Mix well.
- In another bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture until just combined.
- For the cinnamon swirl, mix together granulated sugar and cinnamon in a small bowl.
- Pour half of the batter into the prepared pan, sprinkle half of the cinnamon mixture on top, then layer with remaining batter and cinnamon mixture. Use a knife to swirl gently.
