Instructions

  1. Sift together cake flour, baking powder, salt, and nutmeg in a bowl.
  2. In a stand mixer, beat butter and sugar until sandy; add egg yolks and mix until light.
  3. Alternate adding dry ingredients with sour cream until smooth but slightly sticky.
  4. Chill the dough for one hour covered in plastic wrap.
  5. Roll out dough on a floured surface to about 1/2 inch thick; cut into doughnut shapes.
  6. Heat canola oil in a heavy-bottomed pot to 325°F (163°C).
  7. Fry doughnuts in batches for about two minutes per side until golden brown; drain on paper towels.
  8. Prepare glaze by whisking powdered sugar, corn syrup, salt, vanilla extract, and hot water until smooth.
  9. Dip each doughnut into the glaze and let sit on a wire rack to set.
