- 1 pound shrimp (peeled and deveined)

- Fresh parsley (chopped, for garnish)

Instructions
- Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned. Stir in the onion, bell peppers, celery, and garlic; sauté until softened.
- Add the rice along with Cajun seasoning, smoked paprika, dried thyme, cayenne pepper (if using), salt, and pepper. Stir well to coat the rice with spices.
- Pour in the chicken broth and diced tomatoes if you choose to use them. Bring the mixture to a boil before reducing heat to low. Cover the pot and let it simmer for about 20 minutes until rice is cooked through.
