  • 2/3 cup evaporated milk
  • 2 tablespoons cornstarch
  • 1¼ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions

  1. Preheat oven to 325°F (163°C). Prepare the crust by mixing vanilla wafer crumbs and brown sugar with melted butter. Press into a springform pan and bake for 6 minutes.
  2. For the pecan pie filling, combine dark brown sugar, corn syrup, melted butter, eggs, chopped pecans, and vanilla in a saucepan; simmer until thickened. Cool before pouring over the crust.
  3. In a large bowl, mix softened cream cheese with sugars, pumpkin puree, evaporated milk, cornstarch, and spices until smooth. Pour over the cooled pecan layer.
  4. Bake in a water bath for about 1 hour until edges are set but center wobbles slightly. Add sour cream layer and bake for another 10-15 minutes.
