  • 3 jalapeño chiles
  • 4 teaspoons kosher salt
  • 2 tablespoons ground cumin
  • 2 tablespoons paprika
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 1 cup fresh cilantro leaves
  • 2 medium cloves garlic
  • 2 teaspoons fresh lime juice
  • 1 teaspoon distilled white vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons white vinegar
  • 2 tablespoons vegetable or canola oil
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the green sauce by blending jalapeños, ají amarillo paste, cilantro, garlic, mayonnaise, sour cream, lime juice, vinegar, and olive oil until smooth. Season with salt and pepper.
  2. Spatchcock the chicken by removing the backbone with kitchen shears and flattening it.
  3. Marinate the chicken with salt, cumin, paprika, black pepper, minced garlic, vinegar, and oil.
  4. Preheat your grill using two-zone cooking for optimal results.
  5. Grill the chicken skin-side up on the cooler side until it reaches an internal temperature of 43°C (110°F), then flip to crisp the skin until reaching 63-66°C (145-150°F).
  6. Allow the chicken to rest before carving and serve with green sauce.
