  • 4 oz dark chocolate (113g)

Instructions

  1. In a mixing bowl, soften the room-temperature butter and combine it with sugar until smooth.
  2. Gradually add the flour to create a crumbly mixture, then bring it together into a smooth dough.
  3. Fold in two-thirds of the chopped pistachios, reserving the rest for topping.
  4. Shape the dough into a log, wrap it in plastic wrap, and chill for one hour.
  5. Preheat your oven to 340°F (170°C) and line a baking sheet with parchment paper.
  6. Slice the chilled dough into rounds and bake for 12-18 minutes until golden brown on the edges.
  7. Once cooled, dip half of each cookie in melted dark chocolate and sprinkle with reserved pistachios.
