Ingredients

  • Fresh yeast or active dry yeast
  • Milk
  • All-purpose flour
  • Eggs
  • Sugar
  • Vanilla extract
  • Ground cinnamon
  • Sea salt
  • Apples (soft variety)
  • Frying oil

Instructions

  1. Warm the milk to about 100-110°F (38-43°C) and mix it with yeast and 1 tablespoon of sugar. Let it sit for 10 minutes until foamy.
  2. In a large bowl, combine the milk mixture with flour, eggs, vanilla, remaining sugar, cinnamon, and salt using an electric mixer until smooth.
  3. Cover the bowl and let the batter rise in a warm place for 45 to 70 minutes until doubled in size.
  4. Peel and cube the apples; stir them into the batter and let rest for another 10 minutes.
  5. Heat frying oil in a non-stick pan over medium heat. Spoon batter into the pan to form pancakes and cook until golden brown on both sides.
  6. Dust with powdered sugar before serving.
