Ingredients

- 400g (6) chicken or beef sausages
- 1 chopped onion
- 2 stalks sliced celery
- 2 sliced carrots
- 2 cloves garlic
- 1/2 tsp dried thyme
- 3 tbsp plain flour
- 1 litre (4 cups) chicken or vegetable stock
- 2 bay leaves
- 100g (1/2 cup) wild rice
- 3 medium potatoes, peeled and chopped
- 375ml (1 1/2 cups) single cream
- Salt to taste
Instructions
- Heat olive oil in a soup pot. Remove sausage from casings and break it up in the pot. Cook until golden brown, then remove and set aside.
- In the same pot, sauté onions, celery, and carrots over low heat for about 10 minutes. Add minced garlic and thyme, cooking briefly before mixing in flour.
- Gradually pour in chicken stock while stirring to combine with the roux. Add bay leaves and wild rice; bring to a simmer for about 30 minutes.
- Incorporate cubed potatoes and cook an additional 15 minutes until tender. Stir in cream and season with salt before serving.
