  • 1 cup ricotta cheese
  • 2 tbsp heavy cream
  • 1 tsp lemon zest
  • Salt, to taste
  • ¼ cup honey
  • ½ tsp red pepper flakes
  • 1 tsp apple cider vinegar
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tbsp chopped pistachios
  • 1 tsp fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the carrots in olive oil, maple syrup, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet.
  3. Roast for 20-25 minutes until tender and caramelized.
  4. While roasting, blend ricotta with heavy cream, lemon zest, and salt until smooth.
  5. In a small saucepan over low heat, combine honey and red pepper flakes; stir for 1-2 minutes until heated.
  6. Spread whipped ricotta on a platter; top with roasted carrots.
  7. Drizzle hot honey over the dish and garnish with chopped pistachios and herbs.
