- 1 tsp lemon zest
- Salt, to taste
- ¼ cup honey
- ½ tsp red pepper flakes
- 1 tsp apple cider vinegar
- 2 tablespoons fresh parsley, finely chopped
- 2 tbsp chopped pistachios
- 1 tsp fresh thyme leaves
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the carrots in olive oil, maple syrup, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet.
- Roast for 20-25 minutes until tender and caramelized.
- While roasting, blend ricotta with heavy cream, lemon zest, and salt until smooth.
