- 400g cooked/canned salmon
- 1 cup panko breadcrumbs
- 1 small onion (grated)
- 1 garlic clove (minced)
- 2 shallots/green onions (sliced)
- 1/3 cup fresh dill (or 1 tsp dried herbs)
- 2 eggs
- 1/2 cup grated parmesan
- Salt and pepper to taste
- Vegetable oil for cooking
Instructions
- Preheat the oven to 220°C (430°F).
- In a mixing bowl, combine panko breadcrumbs with grated onion.
- Add remaining ingredients (except salmon) and mix thoroughly.
- Gently fold in the salmon, keeping chunks intact.
- Form patties about 1.5cm thick using approximately 1/4 cup of mixture for each.
- Heat vegetable oil on a baking tray in the oven for about 2 minutes.
- Place patties on the hot tray and lightly spray tops with oil.
- Bake for about 15 minutes until golden brown; flip and bake for another 5 minutes.
