- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 1 tsp honey
- Salt and pepper, to taste
- Pinch of chili flakes (optional)
- Fresh thyme leaves (optional)
- Drizzle of extra virgin olive oil (optional)
Instructions
- Preheat oven to 340°F (170°C). Grease a 6-inch springform pan.
- In a bowl, mix ground almonds, parmesan, melted butter, and black pepper; press into the pan.
- Bake crust for 10 minutes until golden brown; cool slightly.
- Blend ricotta, feta, eggs, Greek yogurt, garlic, lemon zest, and black pepper until smooth; pour into the crust.
- Bake for 30-35 minutes until set in the center; cool completely and chill for at least 2 hours.
- For the jam, toss cherry tomatoes with olive oil, balsamic vinegar, honey, salt, and pepper. Roast at 355°F (180°C) for about 30 minutes; mash lightly.
- Top cheesecake with roasted tomato jam before serving.
