  • 1 teaspoon chipotle chili powder
  • 1 bag tortilla chips
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup black beans (cooked or canned, drained)
  • ½ cup corn kernels
  • ½ cup diced tomatoes
  • ¼ cup sliced jalapeños
  • ¼ cup chopped red onion
  • Lime wedges, for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded tofu, chipotle powder, smoked paprika, cumin, salt, and pepper. Cook for 5–7 minutes until browned and crispy.
  2. Preheat your oven to 375°F (190°C).
