  • ½ cup chopped onion
  • 5 cloves garlic (minced)
  • 1.5 cups cooked corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 cup half-and-half
  • 4 oz feta cheese (crumbled)
  • ¼ teaspoon salt (to taste)

Instructions

  1. Gather all ingredients and prepare shrimp by peeling and deveining if necessary.
  2. Heat olive oil in a skillet over medium heat. Add seasoned shrimp and cook until pink (about 3-4 minutes). Remove from skillet.
  3. In the same skillet, melt butter, then sauté onions and garlic until translucent (about 3 minutes).
  4. Add cooked corn and smoked paprika; mix well.
  5. Stir in half-and-half and simmer for 3-4 minutes until slightly thickened.
  6. Return shrimp to the skillet, add half of the crumbled feta, and stir to combine.
