Ingredients
- 2 racks baby back ribs
- 1 cup root beer (divided)
- 1 tablespoon olive oil
- 1 1/2 cups BBQ sauce
- 3 tablespoons coarse kosher salt
- 1 tablespoon dried oregano
- 1 tablespoon garlic powder
- 1 tablespoon black pepper
- 1 tablespoon chili powder
- 1 tablespoon paprika
- 1 large yellow or white onion (sliced)
- 1/2 cup apple cider vinegar
- 1/4 cup packed brown sugar (light or dark)
- 1 tablespoon minced chipotle in adobo sauce (leave out seeds for less heat)
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Rub the spice mixture over the ribs after removing the membrane.
- Place onions and half a cup of root beer in the slow cooker; add ribs on top.
- Cook on high for 3-4 hours or low for 6-7 hours.
- For BBQ sauce, sauté onion and garlic in olive oil; add remaining ingredients and simmer.
