- 1 can (10-ounce) Rotel diced tomatoes with green chilies (undrained)
- 1 can (10.75-ounce) condensed cream of mushroom soup
- 1/2 cup beef broth
- 1 teaspoon dried paprika
- 1 teaspoon dried parsley flakes (optional)
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt (to taste)
- 2 cups shredded sharp cheddar cheese (divided)
- 1/2 cup crispy fried onions (optional)
Instructions
- Begin by gathering all your ingredients. Chop the onion and mince the garlic. Set them aside.
- Using a skillet over medium heat, add ground beef to the skillet. Stir in chopped onions and minced garlic. Cook until beef is browned and onions are translucent. Drain excess fat if necessary.
- In your slow cooker, add browned beef mixture. Layer frozen diced potatoes on top. Add drained corn and undrained Rotel tomatoes. Pour in cream of mushroom soup followed by beef broth.
- Sprinkle in paprika, parsley flakes (if using), chili powder, garlic powder, black pepper, and salt. Stir everything together until well combined.
- Cover your slow cooker with its lid and cook on low for approximately 3 hours.
- About 30 minutes before serving, stir in 1 cup of shredded cheddar cheese until melted into the casserole. Top with remaining cheese and crispy fried onions if desired.
- Once finished cooking, serve hot directly from the slow cooker.
