Ingredients
- 1 large bone-in lamb shoulder (4–5 lbs)
- 6 cloves garlic, halved
- 2 tablespoons fresh rosemary, chopped

Instructions

- Take the lamb shoulder out of the refrigerator 30 minutes before cooking to reach room temperature and pat dry.

- Place the seasoned lamb in a roasting pan and roast for 3–4 hours or until tender, basting occasionally.
