  • 400g pasta
  • 2 roasted corn cobs
  • 3 green onions
  • 1 shallot
  • 2 jalapeños
  • 1/2 cup cilantro
  • 1 cup cotija cheese
  • 1 cup sour cream
  • 1/2 cup mayo
  • Juice and zest of 1 lime
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper

Instructions

  1. Roast the corn in a frying pan with olive oil for about 10-15 minutes until charred. Remove kernels from the cob.
  2. Boil salted water in a large pot and cook pasta until al dente. Drain and drizzle with olive oil to prevent sticking.
  3. Prepare other ingredients by slicing green onions, mincing shallot, garlic, jalapeño, and cilantro, and crumbling cotija cheese.
  4. Mix sour cream, mayo, garlic, lime juice & zest, smoked paprika, chili powder, salt & pepper to create the dressing.
  5. In a mixing bowl, combine cooked pasta with roasted corn and all prepared ingredients. Pour dressing over and mix well.
