Ingredients
- 400g pasta
- 2 roasted corn cobs
- 3 green onions
- 1 shallot
- 2 jalapeños
- 1/2 cup cilantro
- 1 cup cotija cheese
- 1 cup sour cream
- 1/2 cup mayo
- Juice and zest of 1 lime
- 1 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp salt
- 1 tsp pepper
Instructions
- Roast the corn in a frying pan with olive oil for about 10-15 minutes until charred. Remove kernels from the cob.
- Boil salted water in a large pot and cook pasta until al dente. Drain and drizzle with olive oil to prevent sticking.
- Prepare other ingredients by slicing green onions, mincing shallot, garlic, jalapeño, and cilantro, and crumbling cotija cheese.
- Mix sour cream, mayo, garlic, lime juice & zest, smoked paprika, chili powder, salt & pepper to create the dressing.
- In a mixing bowl, combine cooked pasta with roasted corn and all prepared ingredients. Pour dressing over and mix well.
