- 18 full graham crackers
- 1/4 cup granulated sugar
- 12 tablespoons unsalted butter, melted
- 2 cups fresh sweet potato puree
- 3 large eggs
- 1 1/2 cups whole milk

- 1/4 teaspoon cream of tartar
- 3/4 cup granulated sugar (for topping)
- 1/2 cup light corn syrup
- 1/4 cup water
- 1/4 teaspoon fine sea salt
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
Instructions
- Preheat your oven to 350°F (175°C). In a food processor, pulse together graham crackers, sugar, and salt until finely crushed. Add melted butter and mix until combined. Press into the bottom of a greased 9×9-inch baking pan and bake for about 10 minutes until golden brown.
- In a mixing bowl, combine sweet potato puree with sugar, then add eggs one at a time. Gradually mix in whole milk and heavy cream followed by vanilla, salt, and spices. Pour the filling over the crust and bake for 40–45 minutes until set in the center.
- For the topping, beat egg whites with cream of tartar until soft peaks form; gradually add sugar while beating until stiff peaks form. Combine corn syrup, water, and salt in a saucepan; boil without stirring. Carefully pour syrup into beaten egg whites while mixing on high speed until glossy.
- Spread the topping evenly over cooled pie bars; toast lightly if desired. Cut into squares and serve.
