  • 1 lb shredded colby jack cheese
  • 1/2 lb shredded sharp cheddar cheese
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 12 oz evaporated milk (1 can)
  • 2 cups heavy cream
  • 1 tbsp Dijon mustard
  • Seasonings: salt, black pepper, garlic powder, smoked paprika
  • Fresh parsley for garnish

Instructions

  1. Boil salted water in a large pot and cook the cavatappi until al dente. Drain and set aside.
  2. In a saucepan over medium heat, melt butter and whisk in flour until golden.
  3. Gradually add evaporated milk and cream while whisking to avoid lumps. Stir in Dijon mustard and seasonings; simmer until thickened.
  4. Melt in the cheeses until smooth.
  5. Combine the pasta with the cheese sauce; mix well.
  6. Preheat oven to 350°F (175°C), transfer to a greased casserole dish, top with extra cheese if desired, and bake for 25–30 minutes until bubbly and golden.
