- 1 lb shredded colby jack cheese
- 1/2 lb shredded sharp cheddar cheese
- 3 tbsp unsalted butter
- 3 tbsp all-purpose flour
- 12 oz evaporated milk (1 can)
- 2 cups heavy cream
- 1 tbsp Dijon mustard
- Seasonings: salt, black pepper, garlic powder, smoked paprika
- Fresh parsley for garnish

- Boil salted water in a large pot and cook the cavatappi until al dente. Drain and set aside.
- In a saucepan over medium heat, melt butter and whisk in flour until golden.
