  • ¼ teaspoon allspice
  • ¼ teaspoon nutmeg
  • 1 tablespoon bourbon or amaretto
  • 2 teaspoons vanilla extract
  • ½ tablespoon apple cider vinegar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cornstarch
  • 1 cup (120g) all-purpose flour (for crumble)
  • ½ cup (107g) packed brown sugar (for crumble)
  • ¼ cup (24g) rolled oats (for crumble)
  • ¼ teaspoon cinnamon (for crumble)
  • 6 tablespoons butter, melted (for crumble)
  • vanilla bean ice cream (for serving)

Instructions

  1. Prepare the pie crust and chill it in the fridge.
  2. In a skillet, melt butter and cook sliced apples with sugars and spices until softened. Stir in bourbon, vanilla, flour, and cornstarch; cool.
  3. Preheat oven to 375°F (190°C). Make the crumble topping by mixing flour, brown sugar, oats, cinnamon, and melted butter until crumbly.
  4. Assemble the pie: pour apple filling into crust and top with crumble.
  5. Bake for 50–65 minutes until bubbly and golden brown; cool for at least 4 hours before slicing.
