- 3 ½ pounds firm sweet-tart apples (like Honeycrisp or Braeburn)
- 2 tablespoons butter
- ½ cup packed brown sugar
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
- ¼ teaspoon allspice
- ¼ teaspoon nutmeg
- 1 tablespoon bourbon or amaretto
- 2 teaspoons vanilla extract
- ½ tablespoon apple cider vinegar
- 2 tablespoons all-purpose flour
- 1 tablespoon cornstarch
- 1 cup (120g) all-purpose flour (for crumble)
- ½ cup (107g) packed brown sugar (for crumble)
- ¼ cup (24g) rolled oats (for crumble)
- ¼ teaspoon cinnamon (for crumble)
- 6 tablespoons butter, melted (for crumble)

Instructions
- Prepare the pie crust and chill it in the fridge.
- In a skillet, melt butter and cook sliced apples with sugars and spices until softened. Stir in bourbon, vanilla, flour, and cornstarch; cool.
- Preheat oven to 375°F (190°C). Make the crumble topping by mixing flour, brown sugar, oats, cinnamon, and melted butter until crumbly.
- Assemble the pie: pour apple filling into crust and top with crumble.
- Bake for 50–65 minutes until bubbly and golden brown; cool for at least 4 hours before slicing.
