  • 1 kilo flour
  • 2 eggs
  • 20 leaves Basil
  • 2 tablespoons olive oil
  • 1/2 bunch parsley, finely chopped
  • 1 quart container ricotta
  • 1 zest from lemon
  • 2 teaspoons grey salt
  • Black pepper
  • 8 medium zucchini
  • 1/2 panko bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme, de stemmed and finely chopped
  • 1 teaspoon salt
  • Grated Parmigiano
  • Extra virgin olive oil

Instructions

  1. In a food processor, blend spinach and eggs until smooth. Mix with flour on a clean surface to form dough.
  2. Let the dough rest while you prepare the filling by combining ricotta, lemon zest, basil, parsley, grey salt, black pepper, and olive oil in a bowl.
  3. Thinly slice zucchini using a mandolin slicer.
  4. Roll out the rested dough into thin sheets using a rolling pin or pasta machine.
  5. Preheat your oven to 425°F (220°C).
  6. In a greased baking dish, layer pasta sheets, ricotta filling, and zucchini slices until all ingredients are used.
  7. For the topping, mix panko with garlic powder and thyme; sprinkle over the top before adding grated Parmigiano and olive oil.
  8. Bake for 45 minutes or until golden brown.
